Citrus Vinaigrette.
2 Tbsp. orange juice 1 tsp. Dijon mustard
2 Tbsp. cider vinegar 1/4 tsp. ground cumin
2 Tbsp. honey 1/4 tsp. salt
2 Tbsp. flaxseed oil 1/8 tsp. pepper
Salad:
6 cups spinach 1 can drained mandarin oranges
1/2 cup thinly sliced red onion Garlic croutons
Mix dressing ingredients until blended. Toss with remainder of ingredients. Low fat dressing and salad.
